Grillo is not a compulsory fortified wine
The Grillo grape profile connects an ingredient with Sicily. Here we follow its dry still-white route. The grape also has a Marsala connection, but seeing Grillo on a label does not establish fortification or sweetness.
This guide follows wines sold or understood through one leading grape. A grape name on the label is not a universal guarantee of 100% composition: rules vary. Where an example is described here as 100%, that statement comes from its appellation or producer source. Check the specific bottle and vintage.
SurSur 2025: a clear still-white example
Donnafugata’s SurSur 2025 sheet identifies Grillo and western Sicilian fruit, including its Contessa Entellina estate and other suitable areas. It describes gentle pressing, temperature-controlled fermentation in steel, two months in tank and at least two months in bottle before release.
Read that as the maker’s account of one release. Tank time and bottle time are distinct stages. Neither stage means that the wine was fortified, and the steel vessel does not on its own determine the finished aroma or texture.
A second route into confirmed composition
Planeta’s Plumbago page also lists Terebinto as 100% Grillo. That provides a specifically stated single-grape example alongside SurSur’s named-grape technical account. Check the actual wine’s current sheet when exact proportions or a vintage-specific process matter.
A grape-labelled wine and a documented 100% wine are not automatically identical labelling claims. Our purpose is to help read the evidence, rather than turn a familiar grape name into an unsupported universal percentage.
Follow the white-wine questions
At the press
How were grapes and juice handled? Whole-cluster pressing, skin contact and settling are choices to investigate.
During fermentation
Which vessel, temperature and yeast approach are disclosed? One maker’s steel route is an example rather than a grape-wide requirement.
Before release
Look for lees, maturation vessel and bottle rest. Single-varietal wines may still combine parcels or wine lots.
At the table
Try a vegetable starter, a fresh cheese or a simple seafood pasta. Compare acidity, weight and any sweetness before choosing a sauce. Food pairings are practical experiments, not compulsory rules attached to a grape name.
The steel-tank photograph is from Chavignol in France. Its caption identifies that general process context; it does not claim to show Donnafugata’s cellar.
A small Cork Dork discovery
Give your curiosity a little room.
Read SurSur 2025 beside a Marsala technical account. Identify grapes, fortification, sweetness and maturation as separate fields. Do not infer the method from Grillo alone.
Your observations, your words. Small pours welcome.
A few questions worth uncorking.
Is Grillo always Marsala?
No. Dry still Grillo wines provide a different route.
Does tank maturation mean fortification?
No. Maturation vessel and fortification are separate questions.
Can a single-grape wine combine parcels?
Yes. The same grape can come from different vineyard or cellar lots.
