A scientist discovers another calling
Gary Eberle’s path to wine began far from a California vineyard. At Penn State he combined football with academic study, then pursued cellular genetics in Louisiana. A professor’s wine cellar introduced him to Bordeaux and a lasting interest in Cabernet Sauvignon. He subsequently studied enology and viticulture at UC Davis.
That combination of scientific curiosity and enthusiasm for wine helps explain the next chapter: choosing a place where he believed Cabernet could have a future. Paso Robles became both his working home and a name he would spend decades promoting.
Estrella River comes first
In 1973, Eberle co-founded Estrella River Winery in Paso Robles. His later namesake label grew out of that earlier regional work. The first Eberle Cabernet Sauvignon was the 1979 vintage; the vintage, the wine’s release and the opening of winery facilities are different milestones.
The local Wine History Project records his early work with Syrah as another important strand. Cabernet tells part of his story, while Syrah connects him to the region’s developing Rhône-grape identity.
A label and a regional identity
The small boar became the emblem of the Eberle label, reflecting the meaning of the family name. The Wine History Project also describes Robert Mondavi’s influence on Gary’s thinking about a recognisable label and a memorable welcome.
His contribution extended beyond an individual wine. He helped build recognition for Paso Robles and participated in the work leading to the appellation’s establishment in 1983. The CAB Collective affectionately calls him the “Godfather” of Paso Robles wine. The nickname honours his contribution to a much larger community of growers and makers.
Hospitality belongs in the story
The familiar image of Gary welcoming visitors is part of the winery’s identity. Making a wine and introducing people to its place became connected tasks. The regional account is therefore about enterprise, advocacy and conversation as well as cellar technique.
Eberle’s own 2020 announcement of the American Wine Legend recognition looks back on those contributions and earlier honours. Awards give one route into the history; the more revealing connection is the sustained effort to make the region’s name familiar.

A small Cork Dork discovery
Give your curiosity a little room.
Read Gary’s regional story, then locate Paso Robles and inspect an Eberle Cabernet label. Separate grape, origin, vintage and producer. Which parts identify the wine, and which help tell the story behind it?
Your observations, your words. Small pours welcome.
A few questions worth uncorking.
Was Eberle Winery his first venture?
No. Estrella River, co-founded in 1973, came before his own label.
Is 1979 necessarily the opening date of the winery building?
It identifies the first Eberle Cabernet Sauvignon vintage. Release and facility milestones need separate dates.
Is winemaker Chris Eberle related to Gary?
The winery says they are not related; the shared surname should not be treated as a family succession.
